This dish is a great healthy addition to your taco night!
Ingredients
1 tbsp olive oil
1 can black beans drained and rinsed
1 sweet red onion, diced
1 sweet potato, diced
1 tsp chili powder
1 tsp cumin
½ cup cilantro diced
1 clove garlic minced
Juice and zest of 1 lime
½ cup vegetable or chicken broth
1 red or yellow pepper, diced
Instructions
Heat Skillet with oil, add onion and saute for about 2-3 minutes. Next add sweet potatoes, black beans, garlic and peppers and saute for an additional 3-5 minutes. Add chili powder, cumin lime juice and zest. Cook for 2 minutes. Add broth and simmer until sweet potaotes are fork tender. Lastly add in cilantro. Serve hot or cold.
